Water

When making fresh coffee, the water should start out cold and be of the best quality you can afford. Cold fresh water has more oxygen in it which boosts the coffee’s flavor.

Freshly drawn ordinary cold tap water is okay IF it is palatable; but most tap water has been chemically treated with chlorine and other additives which can inhibit the flavor of most drinks—especially gourmet coffee. To remedy this, use a filter on your tap.

Stay away from bottled drinking water and distilled water. Bottled drinking water comes from the same source as your tap water and most likely is loaded up with the same chemicals and additives. Distilled water lacks flavor-boosting oxygen and will make your coffee taste flat.

The best water to use to make fresh coffee is high quality natural spring water. Poland Springs Natural Spring Water is my preferred brand because of the rigorous standards Nestle Waters (the manufacturer) uses to ensure a high quality product. You can purchase natural spring water at your local supermarket or whole foods store. Poland Springs also has home delivery service in most areas.
