Most children of the 1950s were raised on canned evaporated milk. It was and still remains an inexpensive way to get a daily intake of milk so vital to good bone health.

Evaporated milk is nothing but fresh milk that has been heated through an evaporation process to remove half of the water, thus concentrating the calcium and protein of regular milk and making it nutritionally richer and creamier. What an extra boost of calcium!

There are numerous recipes where evaporated milk can be substituted for whole milk; but the most flavorful thing to do with it is to cream your coffee. You’ll just have to try it. The creamy smooth taste in my opinion is better than half-n-half or using milk, and the best part of it is that because it comes in a can, it only needs to be refrigerated AFTER it has been opened.
